POI BLUE CORN TORTILLA CHIPS

Make your own fresh tortilla chips made with blue corn and fresh poi! You can also make your own taco shells for the perfect Hawaiian-Style taco! This is a great way to pack some nutrition into your snacks!

Ingredients:

2 cups blue corn masa harina (blue corn flour)
1 cup prepared Taro Brand Premium Fresh Frozen Poi
2 tablespoons vegetable shortening
Cooking oil for frying

Directions:

Mix corn flour and vegetable shortening using a fork. Work the shortening into the corn flour until a crumbly mixture is formed. Add poi and mix with hands until the mixture holds together. If you need to add more water, use 1 tablespoon at a time. Portion about 2 ounces of dough, roll into a tight ball and press using a tortilla press. For best results, once you press dough into a tortilla, use a rolling pin to roll out the dough to about 1/16″. Once you have rolled out all of the tortillas (about 8-9 tortillas), cut tortillas into quarters.  Heat oil to 350 degrees and deep fry until golden brown. Drain on paper towels and serve with your favorite salsa or try our lomi lomi salmon dip.
