Did you know that our new line of Taro Brand Pancake Mixes are great for making your favorite cookies?  Here is a holiday cookie recipe made with our new Taro Macadmia Nut Pancake Mix!


2 – 6 ounce packages of Taro Brand Taro Macadamia Nut Pancake Mix
1 block (8 tablespoons butter)
1 tablespoon crisco butter flavored shortening
1/2 cup dark brown sugar
1/4 cup white granulated sugar
1 egg
1 teaspoon vanilla
1 teaspoon pumpkin spice
2/3 cup pumpkin puree

Optional Sprinkle:
1/4 cup sugar
1 teaspoon pumpkin spice


Cream butter, sugar, vanilla, eggs and shortening. Add egg and mix well. Slowly add pancake mix until dough is mixed well. Set dough aside in refrigerator for 30 minutes. This makes it easier to scoop. Using a cookie dough scoop or tablespoon, place 1.5-2 tablespoons of dough onto cookie sheets. Optionally, spinkle sugar pumpkin spice mixture over raw cookie dough. Bake at 350 degrees by placing one cookie sheet on top rack and one on the bottom rack. Cook for 8 minutes, then swap cookie sheets by moving sheet on bottom to top rack etc. Cook for another 8 minutes. Allow cookies to cool before serving.

Makes 2 1/2 dozen cookies.
