Today is the first day of fall and the smell of cinnamon and spice is already in the air with this moist, delicious pumpkin spice cake made with Taro Brand Taro Pancake Mixes.


1/3 cup vegetable oil
4 tablespoons butter, melted
1 cup canned pumpkin
3 eggs
1 teaspoon vanilla extract
2 6 ouncd packages Taro Brand Taro Pancake mix
1/3 cup all purpose flour
3/4 cup walnuts, chopped
1 teaspoon baking powder
1 1/4 cups sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg


In a large bowl,mix vegetable oil, melted butter, eggs, pumpkin and vanilla extract. Blend well.

In a separate bowl, add pancake mix, flour, walnuts, baking powder, sugar, cinnamon and nutmeg. Blend well. Slowly add this mixture into pumpkin mixture blending well but not over mixing.

Heat oven to 350 degrees. Oil and flour a loaf pan. Pour mixture into pan and allow to rest for 10-15 minutes before baking. Bake for 45-50 minutes or until toothpick inserted in center comes out clean. Cool for 5 minutes. Run a knife around edges of loaf to loosen. Remove from pan and cool on rack.
