POI REFRIGERATOR OATMEAL
Looking for a grab-n-go nutritious breakfast? Try these poi refrigerator oatmeal jars made with chia seeds and a touch of greek yogurt.
3 packets unsweetened instant oatmeal
1 cup coconut almond milk (unsweetened)
1/2 cup fat free greek yogurt
1 cup Taro Brand fresh or fresh frozen poi
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon chia seeds
dried tropical trailmix, shredded coconut, chia seeds
Combine ingredients in a bowl and mix well. Spoon about 3/4 cup of oatmeal mixture into glass jars or serving dish. Cover and refrigerate overnight. When ready to serve, garnish with your favorite toppings. You can add your own sweetener if you desire.
