OLD FASHIONED POI CUSTARD CUPS

Custard always reminds me of the holidays.  Try these old fashioned baked custard cups made with poi and chia seeds.1 cup whole milk

Ingredients:

1/2 cup half and half
1/2 cup Taro Brand poi
2 eggs
2 egg yolks
1/3 cup sugar
1 teaspoon vanilla extract
1 tablespoon chia seeds
purple food coloring optional

Preheat oven to 300 degrees.

Directions:

Place six mini mason jars in a deep baking pan. In a medium saucepan, bring the milk and half and half to a simmer over medium-low heat.
In a bowl, whisk together the eggs, yolks, sugar, poi, vanilla and purple food coloring. Slowly pour the egg mixture into the simmering milk, whisking gently to combine.Pour the egg mixture through a strainer into the mason jars. Sprinkle chia seeds into each jar. Pour hot water into the baking pan until it reaches halfway up the sides of the jars. Bake for 30 to 35 minutes until the custard is set. Let the custard cool in the water bath for about 2 hours before serving. Or you may serve warm. Garnish with nuts, coconut, granola and mint leaf or your favorite toppings (optional).
