MACADAMIA NUT PANCAKE MIX COCONUT LEMON BARS

Summer is here and lemons are bountiful! These coconut lemon bars have a buttery macadamia nut cookie crust made with Taro Brand macadamia nut pancake mix, a chewy lemon coconut filling topped with a fresh lemon glaze. The perfect snack to have on hand for the summer!

Crust
1- 6 ounce package Taro Brand macadamia nut pancake mix, (reserve 1 tablespoon of mix and set aside)
3 tablespoons powdered sugar
3 tablespoons firm butter

 

Filling
3/4 cup granulated sugar
1/4 cup flaked coconut
1 tablespoon Taro Brand Macadamia Nut Pancake Mix
2 teaspoons lemon rind, grated
2 tablespoons lemon juice
2 eggs
pinch of salt

Glaze
1/2 cup powdered sugar
1 tablespoon lemon juice

Crust
Heat oven to 350°F. In small bowl, mix 1 cup Taro Brand macadamia nut pancake mix and 2 tablespoons powdered sugar. Cut in butter, using pastry blender or by smashing butter into pancake mix until crumbly. Press in ungreased 8-inch square pan.Bake uncovered about 10 minutes or until light brown.

Filling
Meanwhile, in small bowl, mix all remaining bar ingredients. Pour coconut mixture over baked layer. Bake 25 minutes longer or until set and golden brown. Loosen edges from sides of pan while warm.

Glaze
In small bowl, powdered sugar and lemon juice until smooth; spread over bars. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.
