Summer is here and these poi azuki coconut popsicles pack a lot of nutrition and flavor into this cool treat!


1 1/2 cups canned sweetened, whole azuki beans
1/2 cup heavy cream
1/2 cup whole milk
1/2 cup coconut milk
1 cup Taro Brand Fresh Frozen Poi, prepared with 1/4 cup water
1/4 – 1/2 cup granulated sugar (add sugar to your preference)*
1/4 cup un-sweetened shredded coconut flakes
1/8 teaspoon salt


Place 1 cup azuki beans, shredded coconut, heavy cream in a large bowl and mix until evenly combined.

In a blender, Add the remaining 1/2 cup of azuki beans, milk, coconut milk, poi, sugar, and salt in a blender and process until smooth. Pour mixture into the bowl with the bean and heavy cream mixture and stir to combine. Fill popsicle molds halfway with the liquid part of the mixture. Use a spoon to evenly divide the beans left on the bottom of the bowl among the molds.
