POI YEAST ROLLS

Try this easy recipe for fresh poi yeast rolls. Once you start making your own homemade poi bread, you won’t want to eat anything else. You can make hamburger buns, hotdog buns or just every day bread or rolls with this recipe.

Ingredients:

1 packet active dry yeast
3 tablespoons lukewarm water
pinch sugar

1 cup Taro Brand Poi, room temperature
1/4 cup lukewarm water
12 drops purple food coloring (optional)
2 1/2 cups unbleached all purpose flour
1 1/4 teaspoons salt
4 tablespoons sugar
8 tablespoons unsalted butter, room temperature
1/4 cup nonfat dry milk
1/2 cup instant mashed potato flakes

 

Directions:

In a bowl, dissolve active dry yeast with a pinch of sugar in 3 tablespoons of the lukewarm water. Let the yeast and water sit at room temperature for 15 minutes, until the mixture has bubbled and expanded. Mix and knead all remaining ingredients by hand, mixer or bread machine set on the dough cycle util the dough is nice and smooth in texture. If using a stand mixer, mix for 5-7 minutes at second speed setting. The dough should barely pull away from the sides of the mixing bowl. In a bread machine, it should form a smooth ball. Place the dough in a lightly greased bowl, covered bowl allowing dough to rise at room temperature until doubled in size (about 1 hour). Rising may take longer depending on humidity, temperature etc. Be sure that the dough has a soft pillowy texture. While the dough is rising, lightly grease two 9″ round cake pans, or a 9″ x 13″ pan. Gently deflate the dough, and transfer it to a lightly greased work surface. Divide it into 16 pieces. Shape each piece into a rough ball by pulling the dough into a very small knot at the bottom, then rolling it under the palm of your hand into a smooth ball. Place eight rolls in each of the round cake pans or all 16 dough balls in a 9″ x 13″ pan. Cover the pan(s) with lightly greased plastic wrap, and allow the rolls to rise once more until until the dough is nice and puffy and the edges of each dough ball are now touching (approximately 1 hour). While the rolls are rising, preheat the oven to 350°F. Bake the rolls for about 25 minutes or until golden brown. Remove the rolls from the oven and allow to cool for 2-3 minutes before transferring rolls onto a cooling rack. Serve with butter and guava jam!
